The Elder Scrolls V: Skyrim

Attachment In the games files there is an unused Pit or Arena Called "Windhelm Pit Entrance". Entering the Pit spawns 2 Argonians (Both Male), Nords, Dark Elves and Imperials NPCs, They are all called 'Pit Fans', who are supposed to be spectators. It is believed that Windhelm was going to have an arena at some point of development where you would face against animals or NPC Bandits. There are also Pit guards who are fully voiced, but they cannot be viewed during normal gameplay. The place can be viewed by entering the console commands "coc WindhelmPitEntrance" and "coc WindhelmPitExterior".
Team Fortress 2

There is a piece of unused music that was originally intended to play in the background of the Upgrade Station. While cut from the final version, it is still available within the game's files.
Pokémon Puzzle League

Attachment Hidden inside the code are two unused voice clips. They are presumably from staff issuing a little message to loved ones, as one is in Japanese and reads "Yumi-chan, I love you" and the other reads "I love you Liz."
Crash Team Racing

Ripper Roo was originally going to speak fluent English. This was dropped for unknown reasons and was replaced with his manic laughter along with subtitles. The original recordings can still be found hidden within the game's code.
Silent Hill HD Collection

While the player is given the option to toggle between the original and new voiceovers in Silent Hill 2 HD, the option for original voices in SH3 HD is nonexistent. This is because Heather's original voice actor could not be contacted in time before the game's release.
Super Smash Bros. Brawl

By looking through the game's disc you can find different victory fanfares signed for each character, there's even fanfares for both Mewtwo and Roy. But in the final game, Meta Knight is the only character with a unique fanfare.
LEGO Island

There are two unused sound files on the game's disc. One is the Infomaniac saying to put the disc back into your computer, as if you had ejected it. This sound is never played, as the game will crash when ejecting the CD. The second one is the Infomaniac warning you about entering a duplicate username, which in the final game will result in just using the already existing user, instead of overwriting it as suggested by the audio clip.
Call of Duty 4: Modern Warfare

There's some unused dialog for Captain MacMillan on the game's disc that is never played in-game.
Luigi's Mansion

There's evidence suggesting that Luigi's Mansion was going to be an N64 game. On the game's disc, there's a sound effect for getting a star from Super Mario 64 and a cropped image of Daisy's artwork from Mario Tennis. Hideki Kono, the director for Luigi's Mansion, also stated that the game was originally going to be released on the Nintendo 64.
Left 4 Dead

In the Left 4 Dead (left4dead) and Left 4 Dead 2 (left4dead2 and left4dead2_dlc3) sound files, there are some sounds similiar to a dog. All of them seem to have been cut, but they still exist in the game files. The attack sounds for "zombiedog" were recycled for the Hunter when he'd attack with his claws. This could explain why the Hunter yelps like a dog when he is killed. According to some of the Church Guy's "combatcolor" sound files, the "dog" sounds seem to have been re-made for when he would turn into a Hunter.
Batman: The Brave and the Bold - The Videogame

Hidden in the files are two tracks named batman_song.ogg and song_driving.ogg. When played in a media player, they are actually songs from the anime Cowboy Bebop, being "Spy" and "Rush" respectively. According to the game composer, Jake Kaufman, these were place-holder tracks.

Castlevania III: Dracula's Curse

Castlevania III's Japanese counterpart, Akumajou Densetsu, features a microprocessor chip in the cartridge, named the Konami VRC6. Aside from a few scrolling enhancements, the chip also adds three audio channels to the Famicom's existing five. These channels could provide more extensive and different kinds of sounds than the internal 2A03 chip. Since the international NES does not support the VRC6 expansion, a different chip was used, the Nintendo Memory Management Controller 5 (MMC5). This expansion, however, only adds two clone pulse wave channels rather than the VRC6's two different pulse waves and a sawtooth wave. As such, the NES version of Castlevania III does not feature the advanced sound that is in Akumajou Densetsu.
Pokémon Battle Revolution

There are two unused narrations for Lagoon Colosseum; "ba120_0" and "la030_0" respectively. If ba120_0 is played, the announcer says "Lagoon Colosseum, Tournament Battle. First match". If la030_0 is played, the announcer says "Surrounded by cascading water, the battle is about to begin." These may imply that Lagoon Colosseum was once intended to have been its own tournament in single player battles rather than a multiplayer exclusive colosseum.
Pokémon Yellow Version: Special Pikachu Edition

Attachment There is a piece of music in the game's code that is not in the final game. It's a song from a previous Game Freak game called Bushi Seiryuden Futari No Yusha and is used in the boss battle of the game.
Mortal Kombat

There are audio files which indicate that Fujin (the wind God from Mortal Kombat 4) was set to appear in the game, but was cut.
Hotel Mario

Iggy Koopa is the only koopa without a hotel. However, looking through the game's data reveals each hotel has an internal music, graphics and enemy data file labeled from L1 to L8. L6 is missing in its entirety, and the game jumps from Ludwig's to Wendy's hotel (L5 to L7).

You can extract sound and cutscene data from L6, but the hotel is left entirely blank. This points toward Iggy being planned to have a hotel of his own, opposed to only appearing in Bowser's hotel.

Attachment There is a variant of Totaka's Song found in the game's coding. It is still unknown if the song is played anywhere in the actual game.
Sonic Adventure 2

There are also several unused lines, fully voiced by the game's English cast. Notably, some of these lines hint at scenes removed from the game's Last Story, 2 of which featured the President and his secretary, the latter (as well as Amy) telling the President not to give up hope and a scene that would take place shortly after Finalhazard's defeat, where the President says that, as a child, he admired heroes like Sonic and aspired to be as heroic and beloved as him, with the Secretary offering encouragement.

Another set of lines that would have appeared during the ending credits feature Eggman declaring he'll conquer the world without anyone's help, as well as him and Tails agreeing not to hold back next time they meet.
