According to Warren Spector. He considers Epic Mickey (and Deus Ex) as the high point of his career for bringing back the character Oswald the Lucky Rabbit and getting fan mail regarding his work on Epic Mickey from fans.

"I suspect no one at Disney realizes that we made Ortensia up for our game. I'm sure people at Disney think Ortensia is a part of Disney's history. We made her up. So the fact that Oswald is back, and the fact that Ortensia is now a part of Disney's history, is because of a video game. That's very cool.

I got more fan mail about Epic Mickey than any game I've ever worked on. It was more heartfelt fan mail than any game I've ever worked on. We touched people in a way that games just never touch people.

Screw Metacritic. Screw the gamers who didn't like our camera. Screw everybody. I am really proud of that game, and I am really proud of the team that made it, and nothing is going to ever sway me from feeling like that was one of the high points of my career."

It should be noted that Ortensia was not technically an original creation for Epic Mickey, as she already existed in the Oswald cartoons under the name Sadie. However, Ortensia would become Sadie's official name in the Disney Parks and merchandise following the game.

Within the game files is an audio clip for an unused special quote when pitting Dormammu against Doctor Strange where the former would say "Doctor Strange, let this be our final battle!". This quote is also in the files of the original release, suggesting Doctor Strange was a scrapped character from the original release that was carried over to Ultimate.

In the demo version, a cutscene in Blackwater City shows Darla Gratch says she's reporting for "Channel 64 News", but her microphone has a 2 on it. In the official release version, her small dialogue was change to "Channel 2 News", but her mouth doesn't match the words she says. In later games like Ratchet & Clank: Going Commando and Ratchet & Clank: Up Your Arsenal, she was reporting for "Channel 64 News", as was originally intended during development of the first game.

In a developer interview by Famitsu, the development team stated that the reason they decided to add South American and China teams was because the popularity of KOF in those regions and (in the case of China) because Chinese players didn't know Team Psycho Soldier was technically Team China. They also confirmed that they wanted to add stereotypical Shaolin fighters into the China Team, but after taking a trip to the country, they realized everyone was super fashionable and so they added cool-looking characters instead.

This is also the reason why Nelson (from Team South America) is a cool looking character rather than a typical buff-looking boxer.

During "Dissidia Final Fantasy NT: Behind the English voice cast" with Natalie Lander (Terra Branford's English voice actress), Natalie explained that she wanted to honor Yukari Fukui (Terra's Japanese voice actress) by mimicking her sound quality for her character's voice.
The Legend of Zelda: The Wind Waker

After development of the first game, Nintendo was considering developing a sequel with the working title 'Wind Waker 2'. According to producer Eiji Aonuma, the demand for a more Ocarina like game with Zelda made them reconsider the idea. Artist Satoru Takizawa stated The game would've been set on land rather than at sea.

"To tell you the truth, we had begun the initial steps towards creating Wind Waker 2 around that time. However, demand for a more Ocarina-like game was growing by the day. We did our very best with Wind Waker, and put everything we had into it…
However, Wind Waker 2 would have taken place in a more land-based setting, rather than on the sea, so that we could have Link gallop across the land on a horse.

But Link’s proportions in Wind Waker weren’t very well suited for riding on horseback, he was too short, and an adult version of Toon Link did not seem appropriate either. So, while we were stuck on those problems, we became aware of the greater demand for a more realistic, taller Link. High-budget live-action fantasy movies were also huge at the time, so with all things considered, we decided to have at it. I was on board with the project as art director, and started off by bringing [Yusuke] Nakano on to do the design for Link."

The hand sings used by Oro during his animations for blocking/parrying an attack, using his normal fireball, or using his Yagyou Dama super art, are know as mudra, which are symbolic or ritual gestures from the Hindu and Buddhist faiths; later on incorporated into various eastern styles of martial arts. Additionally, Oro draws Ki energy from a specific part of his body depending on where his hand is placed, for example, if Oro placed his hand on his head he's drawing energy from the brow chakra, and when placed on the chest he's drawing energy from the heart chakra.
