Kingdom Hearts

Bahamut, a recurring summoned creature from the Final Fantasy series, was planned to be a summon for Sora. But it was removed from the final version. Searching through the game data, a Bahamut summon option can be chosen through the use of cheat codes. However, since there is nothing to execute when it is chosen, the game will crash.
Conker's Bad Fur Day

On the charcter select screen (the bar), you can see Banjo's severed and stuffed head mounted above the fireplace and if you look in the closet you'll find Kazooie's stuffed head being used as an umbrella handle.

Grand Theft Auto: San Andreas

Attachment Claude, the protagonist of GTA III, makes a cameo appearance in San Andreas as the contestant of an illegal racing ring. He becomes involved with Catalina, who had recently split up with Carl "CJ" Johnson. Following his loss to CJ, Claude leaves San Andreas with Catalina for Liberty City. Catalina later betrays Claude during a bank heist in the opening sequence of GTA III, thus setting off the events of the game.

Attachment In Boo Mansion, if the player goes through the door across the hall from the entrance and jump in the jar inside, Mario will come out of the jar looking like his original 8-bit sprite from Super Mario Bros.
Borderlands 2

Attachment In the Caustic Caverns is a cave with a number of pixelated blocks. These look very similar to blocks from Minecraft, which break when punched a number of times. Behind these blocks are a handful of enemies called Creepers, including a Badass Creeper, a kind of enemy also found in Minecraft. Among the loot they drop when killed is a new head skin with a pixelated look.
Star Wars: Jedi Knight - Dark Forces II

Attachment Early on in Level 5 "Barons Hed: The Fallen City", if you scare the villagers in Barons Hed, they will run away, and you can follow one fleeing woman who will open the locked door of a house near a bridge. If you can get inside the house fast enough, Max from Sam & Max, a franchise whose first game Sam & Max Hit the Road was developed and published by LucasArts, can be found inside sitting in a chair wielding a modified Bryar pistol (which is ironic since the Bryar pistol is already a modified Bryar rifle) that shoots highly-damaging green bolts instead of red. Max also has a high amount of health similar to that of a Dark Jedi.

Max does not play a death animation when killed. Instead, he just plays the same idle animation when he is first found, but takes on the attributes of a corpse, such as lack of collision. However if he is activated like a switch or door, he will get out of the chair and approach the room's door to exit, waiting for you to open it for him. Upon doing so, he will then wander the level, killing enemies and villagers alike. After Max has been let outside, the player can activate him again, letting them see from his view. A HUD message is also displayed reading, "It's MaxVision™!" If he is attacked by the player, he will return fire. If the player pushes Max outside instead of activating him, and attacks him, he will not fire back. If he is killed after being activated, he will freeze standing instead of playing any animation, but still becomes a corpse.

Max makes a second cameo appearance in Level 9 "Fuel Station Launch". During the final jump at the end of the level, you need to quickly snap back the mouse just before you land so you are facing backwards, which will allow you to see Max's face plastered three times on the front of the platform you just jumped off.

All of the partners from the first Paper Mario were originally going to make cameo appearances in this game, but were scrapped for unknown reasons. However, Parakarry and Lady Bow do remain in the game, and make appearances at the beginning and in Poshley Heights after completing the game, respectively.
SoulCalibur V

SoulCalibur V is the first game in the series to do away with individual endings in the arcade mode, which means several playable characters amount to simply cameo appearances in the single Patroklos-focused story mode, and quite a few make absolutely no appearances at all in the story.
Rad Mobile

Attachment Sonic appeared in this game as an ornament, hanging off of the rear-view mirror. This game was released months before Sonic the Hedgehog, making this Sonic's very first authorized video game appearance.

When you try talking to Link in the Rosa Inn, the "Puzzle Solved" jingle from The Legend of Zelda series plays. When you try talking to Samus in the Mushroom Kingdom Castle, she claims to be "resting up for Mother Brain".
Hitman: Absolution

Kane & Lynch (from the 'Kane & Lynch' games) make a cameo in the game. You can find Kane in the level 'Welcome to Hope' near the Jukebox. Lynch is one of the people who shoots targets in the level 'Gun Shop'.
Devil World

Attachment The main character of the game, Tamagon, appeared as a trophy in the Japanese version of Super Smash Bros. Melee. Tamagon was removed in the American version of the game but the trophy can still be found with Action Replay, complete with a translated description. Stranger still, the Tamagon trophy was removed outright from the European version of the game and cannot even be found with a cheat device, despite the fact that Devil World was released in European countries.
