Resident Evil 5

Parts of Resident Evil 5's Beta were later used in Resident Evil 6. Mainly, the underground ruins, with parts being under water, Gigante-like giants assaulting a town while you had to protect another character trying to help, and a boss battle fought on a train where you had to run from car to car while fighting it. The monster itself (Irving) was also very similar to Birkin's final form.
Minecraft

Originally, zombies used to drop feathers when killed. This was the result of Notch, the developer of Minecraft at the time, not knowing what zombies should drop.
Franchise: Resident Evil

There was once a project to create a Resident Evil game featuring ninjas. The game was to be set in a house filled with traps and hidden doors, much like the mansion in the first game but only set in Japan's Sengoku period. The characters were also supposed to be able to use ninja techniques. Eventually the project got turned into Onimusha.
Resident Evil 5

While the game was originally not supposed to be a co-op experience, Chris still had a partner to go with him to Africa and Sheva still existed in the game. Chris' original partner was Barry Burton, and Sheva was going to be a part of local militia fighting against the Bio Organic Weapons.

Leon was originally supposed to be rescuing Sherry Birkin in RE4 and the story was supposed to tie in with what Wesker said in Wesker's Report: "Sherry is safe in our hands". That part was, however, removed from both the game and the 10th anniversary edition of Wesker's Report.

Attachment Inside the game's files, sprites for a rabbit boss can be found, but these are never used in-game. It was very likely this was going to be the boss of San Francisco, the game's fourth world, until being swapped out with Mecha-Fatadillo.
Minecraft

Attachment Diamonds were originally called Emeralds. Because of the light blue color they had, Notch decided to change the name to diamonds. In the code of Minecraft, Diamonds were still referred to as emeralds until 1.3, which introduced the current item known as Emeralds.
Resident Evil

Attachment The cast to the original Resident Evil was supposed to compose of Jill and Chris but also two characters called Dewey (the team's african-american medic) and Geltzer (the team's huge radio operative). Dewey was planned as a comic relief and the name was later used for the STARS pilot.

In the game's code there is a trainer class for "Chief" called "シルフのチーフ" which translates to Silph's Chief. This possibly meant that the player had to battle Silph Co.'s president.

Super Mario Bros. was originally planned to be a shooting game. According to Shigeru Miyamoto, Mario's fireballs were going to be bullets, and he could fly on a cloud shooting at enemies.

Attachment At Comic Con 2012, Pen Ward, creator of Adventure Time, said when you beat the DS and 3DS game, it would play a video of him in a chair congratulating you in beating the game in a similar fashion to the Pepsi Man. However, it was never added to the game. It is presumed that it is replaced with the Konami Code secret where Pen dances.

Attachment There are various unused voice clips, all belonging to Tikal. One of these clips are instructions on how to transform into Super Sonic. As such, it was probably a dropped feature.

There is an unused item written in the code of the first Pokemon games that would allow the player to ride on water without having a Pokemon use Surf. It has been given the fan name "Surfboard"
Portal

Attachment In the Normal Test Chamber 17 there is a piece of the level that's out of bounds. It was only meant to be accessed in the Advance Test Chamber 17, which is unlocked after the game is completed. It contains a momentum test with a glass panel that has a hole in the middle. This room can be accessed with cheats by typing 'noclip' into the console. It is also possible to access the room without cheats by using the 'Portal edge Glitch' on PC or it can be accessed on console and pc using a glitch called 'Portal clipping'.
