There are two unused copyright strings stored in game's memory:

• The first is at memory location 0x7FAD: "©1987 TAITO"
• The second is at memory location 0x7FB8: "©TAITO CORP."
Super Smash Bros. for Wii U
1
In the game's files there is unused text that says:

Unlocked the Gamer stage! Beware the mother's gaze!
Unlocked the Temple stage! Time to fight way above the clouds!

This most likely meant the Temple and Gamer stages were going to be unlockable stages at one point.
Mario Party 5

The Bowser Capsule is automatically used when obtained so the description for it is never seen. However, there's a description for it found in the game's code. The description says this:
Bowser Capsule
(can't use on yourself)
Increases Bowser spaces and is
active as soon as it appears.
Collection: S.T.A.L.K.E.R.

There is an unused human zombie enemy in the game files for all three games. It is thought they were meant to be the end result of zombified stalkers who have lost the ability to operate mechanical devices.
The PDA Encyclopedia also contains an unused entry for them;
"The Brain Scorcher strips its victim of mind and reason, leaving only an empty, mindless shell."

While not included in the games, all the necessary files are contained in the installed data, making them easy to mod back in.
NASCAR 2000
1
Within the game's code is a string of unused text. It reads:
"Hi. I'm Bob Jenkins.
And I'm a very stylish dude."
Globetrotter 2
1
Attachment Within the game's files are three unused cities: Oslo (Norway), København (Denmark), and Stockholm (Sweden). Despite being unused, they appear to be fully playable if hacked into the game, have their own musical intros, and have batches of trivia questions like all the other cities.
The data for these cities seems to be left over from the original Globetrotter, suggesting they were planned to return like the other reused locations.
Super Street Fighter II: The New Challengers
1
Attachment On the arcade version of "Super Street Fighter II: The New Challengers", Cammy's ending has an error in her dialogue, her line reads; "WAIT! IF WHAT HE". The end of the line is supposed to read "SAYS IS TRUE...", but it was cut off, even though the whole sentence is still inside the data.

This was corrected in "Hyper Street Fighter II", but with a comma instead of ellipses.
Mafia II
1
According to leftover text in the games files, it appears that there were originally plans to include some type of fighting club in the game.
Mafia II
1
The games files include suggestions that a large number of missions went unused. There were also missions that seem to take place during the WWII chapter.
Mafia II
1
The games files include text referencing multiple endings. During development 2K stated there would be multiple endings, but they were missing from the final version.
Grand Theft Auto V
1
According to files in the game, the Gusenberg Sweeper was named the Gusenberg Chopper during development.
Grand Theft Auto IV
1
There is leftover text which suggests that during "Bull in a China Shop" Niko was supposed to beat up the shop owner's son. The son does not appear in the final game at all.
Grand Theft Auto IV
1
The game files suggest that at one point during development Niko was supposed to drive to a food vendor during "The Cousins Bellic".
Grand Theft Auto IV
1
During The Ballad of Gay Tony's mission "In the Crosshairs", the building that Luis was on was supposed to catch fire, leaving him to find another way to escape. There are still text strings that reveal this.
Donkey Kong Country: Tropical Freeze
1
A string of text labelled "miiverse", found in the game files, suggests there was originally going to be an auto-post achievement system for when the player did certain things, similar to Hyrule Warriors.
The Itchy & Scratchy Game
1
Within the game's code are conversations between Bart and Lisa that go unused. This could suggest that it was originally intended for there to have been cutscenes that played between levels, but the idea was dropped during development.
The Itchy & Scratchy Game
1
The text "TOAST!" is loaded into the console's RAM in the SNES version of the game for every level, but there's no explanation for why.
Grand Theft Auto IV
1
In The Lost and Damned, there was originally a skate park, but it was cut. You would not use a skateboard, but instead a motorcycle. There are still files hinting at its existence.
Mafia II
1
Attachment You were originally able to buy a gun license in the game; however, this feature was cut. The feature was shown in the 8 minute gameplay trailer at Gamescom 2009. Roughly 2 minutes into the gameplay trailer, Vito encounters a police officer. One of the options is "Show your LTC" (License To Carry). Furthermore, there are files still in the game referencing this ability. Additionally, there are files in the game that mention being able buy a gun license from Giuseppe.
Sonic Gems Collection
1
There are several games that are not present in the US version, but their listings in the games menu can be seen with Action Replay codes. These games include:

• Bonanza Bros
• Streets of Rage 1
Streets of Rage 2
Streets of Rage 3
• Wonder Boy III: Monster Lair
• Wonder Boy in Monster World
• Monster World IV
• Sonic Eraser

Bonanza Bros and each Streets of Rage game are unlockable in the Japanese version but none of these games can actually be played on the US version.
