Crash Bandicoot: The Wrath of Cortex
1
The original PlayStation 2 version of the game had long load times that averaged around 47 seconds. According to the founder of Traveler's Tales, this was a consequence of a small mini-game intended to be incorporated during development.

Originally, you could move Crash through hyperspace during his falling animation and collect Wumpa Fruit. Any Wumpa Fruit collected would be added to your totals when the level loaded.

Due to a fraudulent patent Namco had over loading screen mini-games beginning with Tekken's PlayStation port, it had to be removed. However, time constraints meant Traveler's Tales could not fix these loading times before release. The Greatest Hits re-release shrunk the loading times down to a mere 17 seconds.
Mario Kart: Double Dash!!
1
Attachment By datamining a demo build of the game, an image of Donkey Kong Jr. can be found, suggesting that he may have been planned to appear in the game instead of Diddy Kong. Interestingly, Diddy Kong's internal filename in the final version is listed as "dk_jr," suggesting that Diddy's appearance may have been a later addition.
Jak II

"Construction Site" is a relatively unimportant level in the game, with only a cutscene being played there and little else for the player to do. It is very likely, however, that this level was at one point meant to have a bigger role in the game. The level has a lot of collision at places that are not normally reachable, and there are text entries for unused mission names, including "Climb Construction Site" and "Find Baron at Construction Site"
Jak 3
1
Attachment In a preview build of the game, it was possible to play as Jak from Jak II. Although this Secret is not present in the final version, it's still possible to trigger it by editing the game's memory, in the same place Secrets are kept track of.
Dead or Alive
1
In the prototype version of the game, Raidou is given an end card sequence, hinting that he would have been unlockable in the final version.

"After all, this is all it is."
A long time had passed since Raidou was expelled from the Mugen Tenshinryuu village. He had only hungered for power ever since. He fought all and every fighter and claimed his technique his own.
Even as he received the invitation to participate in the tournament, he felt this might sate his hunger for power.
However, it seems all was in vain.
Raidou called for thunder and disappeared into the mist...
Super Smash Bros. for Wii U
1
Attachment While battle damage is used for Little Mac, data suggests that other characters were planned to have similar effects. This can be seen in unused textures for R.O.B. in the game's data which seem to show battle damage. This is a remnant to Super Smash Bros. Brawl in which characters were also planned to have battle damage, but were left out.
Shrek SuperSlam
1
Attachment Unused graphic of Shrek's swamp can be found in the GameCube, Xbox, PlayStation 2, and the PC version's files, suggesting that such a stage may have been planned at one point during development.
Mario Kart Arcade GP DX
1
In the files are yellow and blue Yoshi icons, suggesting there may have more palette swaps planned for the game. In the final version, only green, red, and black Yoshis can be used.
Sonic Heroes
1
All 12 playable characters have dialogue in the game that goes completely unused. The audio references an object that's referred to as an Omochao-themed gate. This gate would've been opened via the use of a nearby Omochao. However, no such "Omochao Gate" appears anywhere in the game, and Omochao himself does not physically appear in any level of the game either.
Super Smash Bros. Ultimate
1
Files for Dragonite from the Pokémon series suggest it may have been planned to be summoned from the Poké Ball. While it does not appear as an assist character in the final game, it does appear as a background character in the Kalos Pokémon League stage. Two models for the character exist, with one more in line of those summoned by the player, featuring higher resolution textures.
Sonic Heroes
1
A lot of Team Rose's levels end at a much earlier point than Team Sonic and Dark's. However, through the use of glitches, exploits, or cheats, it's possible to go past the goal ring with Team Rose and go to areas that are only accessible to the two other aforementioned teams. The same thing can also be done in some of Team Chaotix's levels as well.

Interestingly, the characters of both Team Rose and Chaotix have fully voiced and functioning dialogue for these normally inaccessible areas.
Hollow Knight
1
A large area of the game, titled The Boneforest, was cut late in development.
Mario Party: The Top 100
1
Found within the game's data are unused themes of the mini-games "Let's Get a Move on" and "Pandemonium" from Mario Party 3 and 9 respectively, suggesting mini-games from Mario Party 3 and 9 that used those tracks were intended to be included in the game.
Resident Evil 2
1
In an interview, Noboru Sugimura stated that Leon was originally supposed to start out in civilian attire. There would've been a scene between him and Marvin at the police station where he'd change into his police uniform.

"It’s true that with Racoon City destroyed, the police wouldn’t be actively on duty, so there’d be no real need for Leon to change into his uniform… but we wanted to show his determination to protect both the city and his principles by having him change into his uniform regardless. It was a scene with a lot of meaning. Unfortunately, due to a problem with the CG it got cut."
Batman: Arkham Knight
1
Sefton Hill stated on reddit that they were originally going to include an interactive combat battle against Rocksteady employees, in the game's credit. And each time the player got a knockdown, the developer's names and roles in development to appear during the slow-motion. It would've been used for the new game plus, but due to time constraints, they have to remove this feature.
Harry Potter and the Goblet of Fire
1
Unused text in the GBA version's files suggest that all of the in-game spells (except for Expelliarmus) were planned to be upgradeable.
Mario & Luigi: Paper Jam
1
Paper Luigi was originally intended to be playable as well, but he ended up being excluded, because the game became too complicated with his implementation featuring 4 buttons to press.
Spider-Man: Return of the Sinister Six
1
Attachment In the NES version, there are unused sprites suggesting that Spider-Man was once planned to climb walls.
Need for Speed: Underground 2
1
In the PS2, GameCube, Xbox, and PC version's files are removed game modes. These modes include Tournament, Burnout, Knockout, Car Show, and an otherwise undefined "GT" mode that hadn't appeared in previous entries.
Club Penguin: Game Day!
1
Unused data can be found in the game’s files suggesting that the Sensei, Rockhopper, the Jet-Pack Guy, and a robot from the PSA missions were going to be fully functional characters.
