Grand Theft Auto: Vice City

An unused phone conversation between Tommy Vercetti and Avery Carrington mentions an unused area called "Gator Keys", and suggests that there would have been a mission to go there.
F-Zero: Maximum Velocity

There are 4 unused musical tracks in the game's code. The first may have been an alternate theme for the race track Silence, and another sounds similar to the race results screen. The true purpose of these music files are unknown.
Resident Evil 2

The game's trial disc contains a number of unused voice clips. These include:
*Unused death screams for Leon and Claire
*A longer conversation between Marvin and Leon than what is in the final game in which Marvin begs Leon to shoot him in the head should he turn into a zombie.
*A clip of Ada saying "G-Virus..." in a more serious tone hinting at familiarity with the term.
*Leon shouting "Hold your fire!" in the parking lot when Ada shoots at him.
Metal Slug

Attachment Nazca, the company who created the first Metal Slug, didn't have an official logo, and since they were bought by SNK after the first game, their name was never displayed. However, the tiles of the first game contain two logos for the company, one static and one spinning. Neither of them were used in the actual game, though there is still an unused jingle to play alongside them in the game's code.
The Legend of Zelda: Majora's Mask

Through use of Gameshark or Action Replay cheats, it is possible to get "Saria's Song", as well as the "Sun's Song" from Ocarina of Time. The "Sun's Song" has no difference from Ocarina of Time, and fast-forwards time to the next day. "Saria's Song", however, doesn't do anything.
Sonic the Hedgehog

Despite going through the same parts of Flame Core at the same time, Sonic and Shadow are not playable in each other's episodes. However, there are unused sound files that suggest that they were going to team up, with Shadow driving a vehicle while Sonic takes out enemies.
Buzz Lightyear of Star Command

An unused audio file called "buzvbuz.wav" can be found in the game's files. The file is a clip of Bean Bunny from The Muppets.
Crash Twinsanity

A level called 'Gone A Bit Coco' that took place in Coco's mind was cut late in development because it was glitchy and incomplete. It can be seen in early gameplay videos, and the level music was used in the credits sequences.
Dragon Ball Z: Budokai 3

There are several unused voice clips that suggest that there were going to be more characters in Dragon Universe than there actually are. Notably, Kid Goku's Dragon Universe seemed to have involved him finding a time machine that takes him to the current Dragon Ball Z era, fighting Yamcha, Krillin, Tien Shinhan, Piccolo (who he thinks is still King Piccolo), maybe Vegeta, Teen Gohan (who thinks he stole the name from his grandfather) and Broly.
Call of Duty: Modern Warfare 3

It's believed that there was a game mode called Grinder that never made it into the final game. This is speculated because of a number of unused sound files found in the game's code.
SpongeBob SquarePants: Battle For Bikini Bottom

Patrick has dialog for fighting Robot Patrick, King Jellyfish, the Flying Dutchman, and Robot plankton. Sandy has dialog for King Jellyfish, Robot Sandy, Prawn, Robot Spongebob and Robot Plankton. However, Patrick and Sandy never actually see or fight any of those bosses, making that dialog unheard in game.
Spyro: Year of the Dragon

There is a dialogue test that can be accessed in-game. When used in Evening Lake, two unused strings of dialogue can be heard from the Professor.
Call of Duty: Black Ops

There are unused sound files of Hellhounds as well as character quotes that can be found in the files for "Five".
Mad Max

During a private demonstration of the game, journalists reported that Max was portrayed with an American accent instead of the Australian accent from the original film series. Many fans of the series protested against the American accent. Avalanche Studios later responded to the controversy, announcing that Max would still have an Australian accent.

There's an unused song in the data, which was presumably supposed to play on the title screen which features no music in the released version.
On/off

Two unused audio files are in the game's data. The first is the "Congratulations!" sound from Super Smash Bros Melee.

The second one is a flute rendition of Totaka's Song, a 19-Note melody normally hidden by Nintendo composer Kazumi Totaka. It's not known if it can be triggered in-game.
Team Fortress 2

The death sounds in the "Meet the Engineer" trailer are different to that of the final game. This is most noticeable at 0:38, when there is clearly a Sniper on the rocks, but when the sentry gun shoots him, the death sound is that of a Soldier. Additionally, when an off-screen class yells "MY ARM!" at 0:54, it sounds like a Scout yelling, but the arm is clearly that of the Sniper.
Enterprise

There is an unused sound file in the Atari ST version's "Warning.dat" file that sounds of gibberish when played forwards. However, playing it backwards will reveal that it is someone saying "Enterprise is rubbish".
WWE SmackDown! vs. Raw 2006

Attachment There are six unused announcer calls for Maven, Kenzo Suzuki, and Mr. America (Hulk Hogan). It's likely they were all meant to be playable characters during development, but it's unknown as to why they were removed. It's unlikely that this was due to their contracts expiring during development, as the game includes several characters on the roster whose contracts expired during development, such as Spike Dudley, Mark Jindrak, and Joy Giovanni.
