Ghostbusters: The Video Game

Attachment There was a level cut from the final release of the game where the Ghostbusters fight haunted floats in the Thanksgiving Day Parade. At one point during this level, the team would have made a trip to Ray's Occult Books, which was Ray Stantz's book store in Ghostbusters II. A Dopey Dog float was supposed to be the end level boss, but was replaced with a different character. Dopey Dog was a character from The Real Ghostbusters cartoon show.

There was also a "Crowd" mechanic developed for use primarily with this level that was also cut. The "Crowd" mechanic was supposed to simulate the many people that walk the streets of New York City. This "Crowd" mechanic gave up to 1,000 individual NPCs their own AI. The members of the Crowd Mechanic successfully reacted to the Ghostbusters walking by, became scared of ghosts that appeared out of nowhere, and ran in terror when the Stay Puft Marshmallow Man appeared on the street.
Mortal Kombat Trilogy

Johnny Cage was going to be the only classic character to not return. Because his actor quit/was fired after Mortal Kombat II, a new actor had to replace him, which meant remaking all of his sprites. Johnny Cage also replaces the unmasked Sub-Zero, which can be seen in early promo photos.
Pikmin

Attachment Unused textures left in the game reveal that, at one time, it was intended for Pikmin types other than yellow to be able to carry bomb-rocks. This feature was eventually implemented in later sequels of the series.
Sonic the Hedgehog

There is an unused multicolored gem in the game's data called the Rainbow Gem. This gem would have let the character "go super" at any time they wanted. If it is hacked back into the game, the character would go through the Super transformations animations, but would be unable to turn into the Super mode.
Tatsunoko vs. Capcom: Ultimate All Stars

Both Phoenix Wright and Franziska von Karma were planned to be fighters in the game, with Franziska being the more wanted as her whip would have been easy to implement. However, Phoenix had only one move planned, "Objection!", which the developers had trouble balancing since the attack became larger when translating the 4 letter "異議あり" (Igiari) to the 10 letter "Objection!".
Mario Power Tennis

In the intro is a tournament board with every character in the game. In the bottom left corner of the board you can see the team of Toad and Toadette, hinting that they were possibly planned to appear as playable characters at one point during development.
Super Princess Peach

Attachment The Koopalings were originally going to be a part of the game, but were removed for unknown reasons. Sprites for of all seven of them have been found, with Roy's shell being miscolored as green instead of pink.
Left 4 Dead

Attachment During development, there was another Special Infected called the Screamer, when attacked or agitated, the Screamer would run to a safe location and yell out a loud Scream, calling out a horde of zombies. While it was cut, many things were retained from it. The idea of attracting hordes was given to the Boomer in the form of his Bile. The concept of having to avoid an enemy completely or suffer the consequences was given to the Witch. His scream was given to the Hunter, and his maniacal cackle was given to the Jockey.
Sonic the Hedgehog

Attachment The game was originally envisioned by SEGA to be a reboot to the entire franchise, and to build the game similar to the Adventure series, fearing that the previous "Sonic Heroes" and "Shadow the Hedgehog" had made the series stray too far. This also explains the realistic art direction that the game took, along with certain character interactions that don't make sense.
Pokémon Yellow Version: Special Pikachu Edition

Data exists for a battle situation when the Trainer has no Pokémon, though it isn't actually used when entering a battle with no Pokémon in the final release. In this case, selecting any option other than Run shows the message "Hurry, get away!" This may have been a prototype for the initial battle with the wild Pikachu at the start of the player's adventure, as the player has no Pokémon at that point. It could also have been planned for a possible battle against a wild Spearow with Pikachu unable to battle, making it closer to the events of the anime.
Pac-Man

Pac-Man's name was changed from Puck-Man because arcade operators feared vandals would alter the letter P to F on the arcade machine.
Left 4 Dead

Attachment Originally, the Boomers bile was red, and he was meant to have no "puking" capabilities. Instead, he was to explode onto the survivors, dealing significant damage. This was later changed to incorporate the "Screamers" (a cut special infected type) horde-attracting abilities.
Kameo: Elements of Power

Kameo started out as a Gamecube game, and was meant to be a launch title. During the development, Microsoft bought Rare, and the title was moved over to the Xbox. After many delays, the title was moved to the Xbox 360 as an exclusive.
Sonic and the Secret Rings

The game started out as a port of Sonic the Hedgehog (2006), but since they needed a game for the release of the Wii and they wanted to focus on the Wii controller, it was decided to make a brand new game.

Attachment There's an unused firefly sprite which appears similar to the Beehive's Bee sprite which even uses the same wings. It's possible this was intended to be used for the world Mad Monster Mansion, the only level set during night.

Attachment In the issue of Weekly Famitsu published in 9th of September 1994, Itoi refers to the battle backgrounds as a "Video Relaxant." The Video Relaxant was going to be an in-game item and was originally referred to as a "Video Drug". It can still be found in the game's files. It has no function and the description of the item is "What the hey is this?"
