Sonic Heroes
A lot of Team Rose's levels end at a much earlier point than Team Sonic and Dark's. However, through the use of glitches, exploits, or cheats, it's possible to go past the goal ring with Team Rose and go to areas that are only accessible to the two other aforementioned teams. The same thing can also be done in some of Team Chaotix's levels as well.

Interestingly, the characters of both Team Rose and Chaotix have fully voiced and functioning dialogue for these normally inaccessible areas.

Resident Evil Zero
The idea of not having "item boxes" in the game was based on "Sweet Home". The team wanted to remove it, so that it would feel a lot harder to play.

Alien: Isolation
At one point in development, it was planned for the Working Joe enemy to quote lines from William Shakespeare in a malevolent manner. However, it was ultimately decided it didn't fit with the tone of the game and the few recorded lines were cut from the game.

JoJo's Bizarre Adventure: Eyes of Heaven
There are unused voice files in the game for Part 6 Jotaro, who isn't present in the final game aside from an image in the game's credits.

Unlike other boss characters, Spoiler:Giga Bowser is classified as a fighter in the game's files, even having placeholder slots for alternate costumes.

These are likely leftovers from the previous game, Spoiler:where Giga Bowser appeared as a playable transformation.

Near the scouter entries for Android #18 in the ROM are unused scouter entries for Android #13, Android #14, Android #15 and Super Android #13 from the movie Dragon Ball Z: Super Android 13.

Super Mario Odyssey

The art of Super Mario Odyssey reveals that Rosalina was going to appear in the game as a non-playable-character in casual attire with a guitar. The book also reveals several unused outfits for Mario, such as the green Sprixie Princess from Super Mario 3D world, a Toadette costume, a costume of a Luma from Super Mario Galaxy, and a costume of Mario in a Japanese school girl outfit.

Found within the game's data are unused themes of the mini-games "Let's Get a Move on" and "Pandemonium" from Mario Party 3 and 9 respectively, suggesting mini-games from Mario Party 3 and 9 that used those tracks were intended to be included in the game.

Kingdom Hearts 3D: Dream Drop Distance
There are hidden rooms in the game's code. Some of the hidden rooms are part of cutscenes, while the rest are designed for boss fights. The only way to access hidden rooms is to hack the game's save files.

It was revealed that what looks like a Mega Man Starforce costume, seen from a picture taken by Game Informer, was only a placeholder costume for when Mega Man equipped Tundra Storm's weapon during development.

Resident Evil 2
In an interview, Noboru Sugimura stated that Leon was originally supposed to start out in civilian attire. There would've been a scene between him and Marvin at the police station where he'd change into his police uniform.

"It’s true that with Racoon City destroyed, the police wouldn’t be actively on duty, so there’d be no real need for Leon to change into his uniform… but we wanted to show his determination to protect both the city and his principles by having him change into his uniform regardless. It was a scene with a lot of meaning. Unfortunately, due to a problem with the CG it got cut."

Batman: Arkham Knight
Sefton Hill stated on reddit that they were originally going to include an interactive combat battle against Rocksteady employees, in the game's credit. And each time the player got a knockdown, the developer's names and roles in development to appear during the slow-motion. It would've been used for the new game plus, but due to time constraints, they have to remove this feature.
